With spring in full swing and summer waiting patiently around the corner, our bar team has come together to release an inspired new cocktail list showcasing the very best of what Vancouver Island, and BC, have to offer. This season, our cocktail selection aligns with our kitchen’s creations, sharing similar ingredients between the two and collaborating with the pastry team to bring unique garnishes and candied items to our bar offerings. A glimpse at our refreshed and diverse menu reveals plenty of local ingredients, with salmonberries, kelp, salal berries, rhubarb, celery, spruce tips, wild blossoms, and plenty more, making guest appearances throughout the menu. As another nod to spotlighting our very own BC gems, local producers of spirits and liqueurs are featured almost exclusively in the new cocktail lineup.
One of these reimagined mixes is our floral-inspired Flight of the Bumblebee, which incorporates Sooke-based Sherringham Kazuki gin, a Japanese-influenced spirit with an essence of juniper, yuzu, and cherry blossoms. The gin is paired with a local elderflower liqueur from Arbutus Distillery, showcasing BC elderflower’s very distinct, more rich and musky flavour, completed with wildflower-infused honey from hand-picked local flowers. This delight, and plenty more, await you on your next visit to The Pointe Restaurant!
